Olympia Hybrid Spinach is very slow bolting and resists 9 strains of downy mildew. It’s a good choice for areas with high humidity, where downy mildew is a serious problem. Its semi-upright habit makes it ideal as either a baby leaf (cut it just 3-weeks after sowing seed) or as mature spinach (harvest it at 45-days to 50-days). Great for cooking, salads and soups, and can be canned or frozen for future use. Also known as Northland spinach.
